Ingredients:

Salmon – Natalia prefers wild caught salmon but you can use any type you like or have available

Garlic – 6 cloves minced

2 Lemons – one sliced and one for juicing

Cilantro – a handful minced 0f fresh

1/4 – 1/2 Tsp. Pimenta Moida (crushed chili pepper)

1/2 Cup Olive Oil

1 Lime

Salt to taste

Directions:

In a bowl add: 6 cloves minced garlic, the juice of one lemon, handful of minced cilantro, half cup of olive oil, and pimenta moida to taste. Mix.

Put salmon, filet side down, on aluminum foil and salt to taste. Tent the foil to create a package and before sealing add bowl of mixture over the top of the salmon. Then add lemon slices over top. Seal the foil package. Bake for 35-40 minutes at 400 degrees. When you pull out of the oven, plate the salmon and drizzle the liquid from foil over the salmon, then squeeze the juice of one lime over top and serve.

This dish pairs well with any vegetable you like. Natalia loves to serve it with grilled asparagus and either roasted or boiled potatoes or a rice.
