In this recipe, Natalia brings the best of an Alfredo Pasta combined with her delicious Seared Scallops. This simple recipe can become very fancy if you like to decorate your dish as much as Natalia does! She guarantees that your family and friends will love it!

Ingredients:

1 box of linguini
1 stick of butter
A pinch of red pepper flakes
1 cup of grated Parmigiano Reggiano
Salt & pepper to taste

Instructions:

In a large pot of boiling water cook pasta to package instructions
In another pan saute garlic and red pepper flakes in ¼ of the butter until garlic is soft but not brown or burnt.
Remove the mixture to a large mixing bowl and set aside.
Return the pan to the stove on high heat, add s&p to the scallops and sear them in ¼ of butter when browned on both sides set aside on a plate.
Put the remainder of the butter into pieces and arrange around the bottom of the mixing bowl with the garlic mixture and sprinkle with ½ of the grated Parmigiano cheese. Add the hot pasta, reserving the cooking water.
Stir quickly to melt the butter, and incorporate the garlic, add a reminder of cheese and half a ladle of hot pasta water stirring to create a creamy pasta.
Top with seared scallop, some basil leaves, and a drizzle of great olive oil.
I had shrimp as well so just added it.

This dish pairs beautifully with Foral Alvarinho.
