In this video, Natalia Paiva-Neves brings a super simple to make One Dish Shrimp Pasta which cooks in under 15 minutes. It’s a perfect dish for you who has a super limited time to prep your meal or simply is in the rush for the day.

Ingredients:

13″x9″ baking dish or aluminum tray
olive oil
2 tbsp minced fresh garlic
1 package cherry tomatoes cut in half
2 lbs shrimp
2 handfuls of freshly chopped parsley
sea salt (to taste)
1/4 tsp crushed red pepper flakes (or more if you prefer more heat)
3 handfuls of baby spinach (or more, as you like)
1 container mascarpone cheese
8oz package Farmstead Cheese at Whole Foods
1/8-1/4 cup (2 small handfuls) of shredded parmesan cheese

Instructions:

Cook 1lb package of spaghetti to al dente instructions on the box and set aside or cook while putting the rest of the ingredients together.  You may substitute another pasta if you prefer a different type.

Cover the bottom of the baking dish or aluminum tray with olive oil and then add the minced fresh garlic, cherry tomatoes, shrimp, freshly chopped parsley, and sea salt to taste. Cook for 7 minutes at 500 degrees.

Pull out of the oven and add crushed red pepper flakes, baby spinach, mascarpone cheese, Farmstead Cheese, and shredded parmesan cheese. Cook the above for another 5 minutes approximately (until spinach is wilted)

pull out of the oven and add cooked pasta. Mix together then serve.
