Today, Natalia brings a delicious and traditional dish, the Baked Cod with olive oil and Red & Green Peppers. It is a very simple and easy recipe and the come-out is extremely tasty!

Ingredients:

A portion of desalted sauteed cod 
3 yellow onions sliced
6 potatoes sliced in thick pieces
2 heads of garlic sliced or finely minced 
2 bay leaves
1 sliced Red Pepper
Olive oil
1 ½ of a glass of white wine
Salt & Pepper to taste
1 Red and Green Pepper
2 Cloves of garlic

Instructions:

Drizzle some olive oil on your baking dish
Add half of your onions and the sliced potatoes. Arrange them to cover the entire dish and add the sliced garlic.
Add Salt & Pepper on taste, drizzle a little more olive oil and lay the codfish pieces. Don’t forget to add your bay leaves
After, finish adding the sliced onions followed by white wine and a little bit more of olive oil all over the Cod
Add salt and pepper to your taste and cover the dish with aluminum foil, bake at 400 degrees, for about 30 min.

Take a green and red pepper and the 2 cloves of garlic
Put into a baking dish, drizzle olive oil, salt and pepper, and bake alongside the cod for 20 min until it gets blistered and chard.

Take both dishes out of the oven.
Remove the skin of the peppers and put them on top of the cod

But the cod back in the oven for another 20 min to give it some color 
Serve with a wonderful bottle of wine
